“Just going is an amazing opportunity that I’m really excited for ... seeing the other dishes will be cool,” Rai says.
while she’s in school, Rai has found mentors in executive chef Anthony McCarthy and executive sous chef Justin O’Reilly. They helped her train for the provincial competition and they’re doing the same for the national challenge, she said.
Balancing work and school with her training, Rai said she uses any free time she can get to plan and practise her dishes, even heading to work early for extra time with her mentors.Article content
