This brightly flavored muffin is perfect for a quick breakfast with coffee or an afternoon pick-me-up with a cup of green tea.
Most commonly used as a bagel topping, poppy seeds are a delicious addition to muffins as well. The tiny seeds are generally imported from Turkey, Spain and Czechia, and provide a nutty crunch to baked goods. The seeds are harvested from the poppy plant after the beautiful blooms fall off. Seed pods remain on the plant, and they’re dried for several days before they’re cut open and the blue-black seeds are harvested.
Often used in Middle Eastern and Eastern European cuisine, poppy seeds can be used in both sweet and savory recipes. I was curious why poppyseeds are often combined with lemon, and it turns out this combo is popular because the acidity of the lemon helps balance out the richness of the poppy seeds. The diminutive seeds not only add flavor to recipes, but are also high in fiber, contain essential omega-6 fatty acids and are a surprising nondairy source of calcium.
