HARPERSFIELD, Ohio -- Seven Brothers Distilling Co. has moved from Leroy Township in Lake County to Harpersfield Township in Ashtabula County. The 10-year-old distillery now has a 1,800-square-foot tasting room and has more than quadrupled its production space. Visitors to the new facility, which opened in mid-August, can sample spirits, quaff craft cocktails and buy bottles to go. The spirits are also available in local state liquor stores.
Kevin Suttman, one of seven brothers and one sister who grew up in Painesville, started planning the distillery in 2010. By 2011 he’d built equipment and obtained the necessary licenses. That’s when he created a small operation on family property near his house in Leroy Township. Over the years production and storage spilled into other outbuildings and even shipping containers.
Construction took about 10 months and distilling in the 160-gallon hand-built still restarted Oct. 3. Plenty of work remains in the production facility. A small 10-gallon still is ready for experimental infusions. Meanwhile, a shiny, new 300-gallon still – nicknamed “Norman” -- sits in parts, ready for installation. It’s industry practice to name a favorite still. Suttman is eager to see all three stills in production.
Seven Brothers vodkas are wheat-based and Suttman is planning to release a wheated malt whisky soon. All told Seven Brothers offers 10 spirits, which will grow to 12 by year’s end. “I can capture flavors that other stills can’t capture,” says Suttman. That’s because he uses a proprietary vacuum system in his distillation. And that means the ingredients boil at a lower temperature and, during distillation, retain subtle flavors.
